Funfetti sugar cookies
To me, funfetti equals childhood.
Whether it was a handful of jimmie sprinkles tossed on top of one singular scoop of vanilla ice cream, or the child-like giddiness I felt biting into what I thought was a plain cupcake and was pleasantly surprised by the tiny specks of rainbows. It was pure, innocent joy.
There's a certain nostalgia attached to any rainbow spotted dessert.
Even now as an adult you can’t tell me you don’t feel a bit childish (in a good way!) when you eat funfetti. It’s simple, sweet, and fun.

If you love sprinkles, you'll definitely love funfetti. These funfetti sugar cookies are quick and easy and sure to bring a smile to your face.
Ingredients
- 3 cups (360g) all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp of kosher salt
- 1 cup (226g) of unsalted butter
- 1 ½ cups (300g) of white granulated sugar
- 2 large eggs
- 1 ½ tsp of vanilla extract
- 1 tsp almond extract
- 1 cup (200g) of rainbow sprinkles (also known as jimmie sprinkles)
Instructions
- Place the oven rack in the middle of the oven. Preheat to 350°F.
- In a medium mixing bowl whisk together flour, baking powder, baking soda, and salt. Set aside.
- In another medium bowl cream together butter and sugar until fluffy.
- Add in eggs and vanilla extract. Mix until just combined.
- Using a rubber spatula, fold in the flour mixture until just combined.
- Add rainbow sprinkles to batter. Either mix in with a rubber spatula, or knead using your hands. (using your hands is definitely faster)
- Scoop about 1 tablespoon of dough into your hands and roll into balls. Place on parchment line baking sheets.
- Bake for 8-10 minutes turning half way through.
- Let cookies rest on a baking sheet for 5 minutes before carefully moving them to a wire rack to cool.
Cookies can be stored in an airtight container for up to 3 days.
