Lemon ginger bars
There are some desserts that are synonymous with certain seasons.
To me, lemon bars are a warm welcome of spring and summer. We shed our winter layers, and the world around us becomes a little less gray.
But lemon bars don’t have to be exclusive to the long lazy days of warm weather. It’s especially during the winter months that I look forward to summer-y desserts. Which is ironic considering how much I dislike summer. I like the idea of summer, and the activities that come with it. I just despise being hot.
What I’m saying that if you want me to enjoy the heat, give me a sweet treat, and I’m betting these lemon ginger bars are a good start.
Baker’s note: Glassware versus metal baking dishes
Glass baking dishes take longer to heat up, but when it does get hot it retains heat longer, whereas metal baking dishes heats up and cools down quickly. The type of baking dish you use can impact the bake time. If you're using glass, you may need a longer cooking time, so be sure to keep an eye on whatever you’re baking or cooking.
Lemon bars can be kept room temperature for no more than a few hours, or kept in the refrigerator before serving. Can last up to 5 days if refrigerated.
