Soft and chewy chai cookies
I cannot for the life of me stomach coffee straight up.
Americano, black….any other pure form of coffee that’s unknown to me. My taste buds won't allow it. I’ve always had a sweet tooth, and I’ve always joked that I like my sugar with a little coffee, so imagine my surprise when I discovered the simple beauty of a chai latte.
Hot or iced, it’s cozy spice blend is the perfect amount of bite and sweetness I’m looking for, and it tastes just as great as a cookie.
These cookies are jam packed with chai flavor. In addition to the chai spice mix in the dough, a nice coating of sugar + chai spice mix is rolled onto the dough right before baking. If you love chai like me you can never have too much ;)
Ingredients
1 ¾ cups (210g) all-purpose flour
½ tsp baking soda
½ tsp salt
1 tsp ground cinnamon
½ tsp ground cardamom
¼ tsp ground cloves
½ tsp ground ginger
½ tsp black pepper
¼ tsp nutmeg (optional)
1 large egg, room temperature
½ cup (113g) unsalted butter, softened
¾ cups (150g) light brown sugar
¼ cup (50g) white granulated sugar
1 tsp vanilla extract
2 Tbsp of white granulated sugar, plus same spice amount for cookie dough (for rolling)
3 Tbsp of powdered sugar (for rolling)
Directions
In a medium mixing bowl whisk together flour, baking soda, salt, ground cinnamon, ground cardamom, ground cloves, ground ginger, ground nutmeg, and black pepper. Set aside.
In a large mixing bowl cream together butter and sugar until fluffy.
Add in the egg, vanilla extract, and Mix until well combined.
Add in dry ingredients, and mix.
Let cookie dough chill in the refrigerator covered for 30 minutes.
Place the oven rack in the middle of the oven. Preheat to 350°F.
Scoop out balls of dough and first roll in the 2 tablespoons of white granulated sugar spice mix.
Then roll in the powdered sugar, coating well.
Place on a parchment lined baking sheet and bake cookies for 10-12 minutes, rotating half way through.
Let cookies rest on a baking sheet for 5 minutes before moving to a wire rack to cool.
